The beginning
A room of forty-two.
In 2016 Chef Matteo Laurent and host Amélie Voss opened a small dining room on Aurelia Street. They wanted fire, linen, and enough space between tables that a conversation could stay a conversation.
The name Velora is invented — a word that sounded like evening. It has come to mean the hour when the kitchen quiets and the first plates leave the pass.
Our philosophy
Cook less.
Mean more.
We keep the menu short so the brigade can finish every plate with the same attention as the first. Technique is French in its bones, Nordic in its restraint, and local in its produce.
Nothing on the plate is there to impress a photograph. If it does not earn its place in the mouth, it does not leave the kitchen.
Our ingredients
Known by name.
Vegetables arrive from two farms we have cooked with since opening. Fish is called in from the coast the morning it is served. Herbs are cut the same day. We would rather change a dish than compromise a season.
The wine list follows the same instinct: growers over brands, bottles that sit well beside fire-cooked food.

A small brigade.
Matteo leads the kitchen. Amélie holds the floor. Together they have assembled a team that prefers calm to spectacle — sommeliers who listen, cooks who taste constantly, hosts who remember how you take your water.
Hospitality, for us, is not a performance. It is the quiet work of making someone feel expected.
